RECIPE FOR KOURABIEDES – TRADITIONAL CHRISTMAS BISCUITS
INGREDIENTS
1 cup of butter
1 cup of soft margarine
½ cup of icing sugar
Vanilla essence or powder
1 cup of blanched almonds lightly roasted and cut into pieces
4 or 5 cups plain flour
Rosewater and icing sugar for the coating
METHOD
Beat the butter, margarine and icing sugar using a mixer until they become light and fluffy. Add the vanilla, the almonds and half of the flour and knead by hand, adding the remaining flour so that the dough does not stick to your hands. Make into small, round shapes and bake at 175 degrees Celsius for approximately 35 minutes until they begin to turn a light golden brown. Take them out of the oven, sprinkle them with the rosewater and dust them with icing sugar using a sieve.
